Recently I participated in a cooking competition 'Iron Chef' organised by residence society. My neighborhood is very diverse and has people from almost all over the globe. In this competition, all the participants were provided with some secret elements and they have to come up with a dish that represents them on the plate. And, immediately after seeing the ingredients, it instantly came to my mind to make Thukpa. And here goes the recipe for the Thukpa, I hope you would love this unique soup recipe as much as I do. Recipe for: Himalayan Noodle Soup (Vegetarian Thukpa Soup)
Literal meaning of
‘Thuk’ is heart, so it is called a heartwarming soup and is quite famous in
India, Bhutan, Nepal and Tibet. It could be made either with only vegetables or
meat, usually buckwheat noodles are preferred with this recipe.
Prep time: 20 minutes
Cook time: 30 minutes
Serving: 2- 3 persons
Ingredients
1. Extra Virgin Olive Oil (you can use any
oil/butter as per your choice)
2. Mushrooms (5-10 pieces)
3. Sugar Snap Peas (15-20 pieces)
4. Sweet Peppers (red, orange, yellow, 1 cup)
5. Garlic (4-5 cloves, cut in thin slices)
6. Garlic Salt (as per your taste)
7. Roasted Sesame Seeds (15-20 gm, used for
seasoning)
8. 1 Habanero or any Chili (Optional, can cut in
small pieces)
9. Carrots
10. Red Onion
11. Zucchini
12. Green Peas
13. Cabbage
14. Ginger
15. Black peppers (for seasoning)
16. Noodles
Cooking Instructions:
1. Boil the noodles in veg broth and strain it and
reserve the both.
2. Cut all the vegetables in julienne.
3. Heat the cooking oil in a deep, soup pot and
lightly sauté all the vegetables.
4. Add reserved veg broth or water in the soup pot
and bring it to a roaring boil and then let it simmer for 20-30 minutes on a
slow flame.
5. Then, add garlic salt, chili, herbs and mix
well.
6. Finally, sprinkle the roasted sesame seeds.
7. Ready to serve.
Serving:
Serve boiled noodles in
a soup bowl and then pour a generous amount of warm soup over it and squeeze
some lemon for that extra pinch
